Back when Ben and I were newly married, I experimented in the kitchen frequently. Not many of my recipes made it past the first night (turns out I'm not much of a Martha) but we did have a fave that I call Fruit Salsa. It's basically like a mini fruit salad... with homemade cinnamon sugar chips for dipping. I usually make this for dessert, but it also makes a great party dish, appetizer or snack.
Things you need:
- 1 package of flour tortillas
- Cinnamon
- Sugar
- Spray oil
- 1 lemon, halved
- 1 container strawberries
- 1 can crushed pineapple (or cut up the cubes)
- 2 apples
- 3 peaches or 12 oz can peaches
Tip: I've also made this with kiwi and other yummy fruits. I've found that berries don't work well and the strawberries and pineapple seem to be the 2 key fruits, but feel free to experiment with your favorites.
What you do:
Cinnamon Sugar Chips
- Preheat oven to 350
- Cut the tortillas in stacks of 6 in half, then in quarters, then into eighths - they will be the size of a chip. I usually make about 5 or 6 stacks.
- Place the tortilla slices on a nonstick baking sheet and spray them with oil. Don't overlap pieces.
- Then sprinkle cinnamon and sugar over them.
- Bake for 10-12 minutes, so just lightly browning but not too crispy. They will harden more as they cool.
Fruit Salsa
- Cut up the strawberries into small pieces (so they look diced).
- Drain the can of crushed pineapple or cut up fresh/canned pineapple chunks until they are small.
- Cut up the peaches into small diced pieces.
- Cut up the apple into small diced pieces.
- Mix the strawberries, pineapple and peaches into one bowl.
- Place the apples into a separate bowl and squeeze half of lemon over them. Toss.
- Scoop the apples into the bowl with the other fruits.
- Add 1 quarter tsp cinnamon and 1 tsp of sugar and mix together. (Feel free to add more cinnamon sugar or squeeze some extra lemon juice in to your liking.)
You can enjoy immediately! It also tastes great after a few hours in the refrigerator, as the flavors mingle together. Don't bother putting it on a plate - it's much easier to just grab the bowl of chips and dig right into the bowl of salsa.=)
